Ingredients
- 1 pack of large spring roll pastry sheets (or phyllo pastry)
- 300g minced beef or lamb
- 3 eggs (whisked)
- 1 cup leeks or green onions (very finely chopped)
- 1/2 cup tomato (deseeded and finely diced)
- 1 onion (finely chopped)
- Spices: 1 tsp cumin, 1 tsp coriander powder, 1/2 tsp black pepper, salt to taste.
- Garnish: Fresh lemon wedges and green chili peppers.
Step-by-Step Instructions
- 1. Cook Meat Filling: In a frying pan, cook minced onions with a little oil. Add the minced beef or lamb, cumin, coriander, salt, and pepper. Sauté until meat is completely browned. Let it cool slightly.
- 2. Prepare Egg Mixture: In a bowl, beat the eggs. Stir in the chopped leeks (or green onions), diced tomatoes, and the cooled, cooked meat. Mix well.
- 3. Assemble Mutabbaq: Lay a pastry sheet flat on a clean board. Place 3 to 4 tablespoons of the filling mixture right in the center of the sheet.
- 4. Fold into Squares: Fold the left and right sides of the sheet over the filling, then fold the top and bottom sides over, sealing the filling inside to form a flat square pocket. Use a little beaten egg on the edges to stick them securely.
- 5. Pan-Fry: Heat a flat griddle or wide skillet on medium-high heat. Add 1 tablespoon of oil. Carefully place the folded Mutabbaq seam-side down. Fry for 3-4 minutes until crispy and golden brown, then flip and fry the other side.
- 6. Serve: Slice the Mutabbaq into small squares. Serve immediately while hot and crispy with fresh lemon wedges to squeeze on top, and small green chilies on the side.
